Saving Face with Chicken and Broccoli Stir Fry

Clearly after last night's disaster we need to redeem ourselves with something super yummy. And because we're stuck in the theatre every night (Olivia's playing Helen Keller in The Miracle Worker), it's got to be quick and easy too. We found just the ticket....

The great thing about this Chicken and Broccoli Stir Fry recipe is that it's customizable. Don't want chicken? Try shrimp instead. Vegetarian? Baked tofu would do nicely. Decrease the fat and sodium by halving the oil and using low-sodium soy sauce.

Want to kick up the heat a bit? Do what we did and substitute Greater Galangal for the ginger. They look and cook the same, but galangal packs more punch.

We also offered the kids rotini instead of whole wheat linguini tonight given the "Why are you making me eat flat brown noodles?!?" response we got last night.
